where can I find the glossary for the terms in the advanced print settings?

These settings are either Slic3r or Cura settings depending on what you or your printer manufacturer set.

ok - so the first thing I tried to look up in the Cura settings is the “fan full height” setting, but I can find no reference to that in the Cura PDF you linked too.

any insight into what this setting does?

It’s the height at which the fan will be turn on completely. It’s supposed to increase the speed linearly from 0 to the value of “full fan height”
